About Whole Grains

There are significant differences between snack foods made from refined white flours and those made from healthy whole grains.

The majority of grains we eat today are no longer “whole” grains. They’ve been processed to remove the most nutritious parts of the grain – the bran and germ – to create softer, finer flour and increase its shelf life. This “refining” process also removes most of the dietary fiber, iron, and many of the vitamins and minerals in the grain. Although they are later “enriched,” many of the important nutrients are never replaced.

Whole grains are grains that still have the bran, germ and endosperm intact. However, when not refined, they have a coarser texture and a bitter taste. This causes many manufacturers to add sugar and salt to whole grain baked goods to make them more appealing. Of course, this counteracts some of the nutritional value and causes many of the products to have more sugar and calories than their refined grain counterparts.

Enter “Sprouted” Whole Grains

The process of “sprouting” whole grains is able to preserve the nutrient-rich germ, the starchy endosperm, and the fibrous bran of the grain while maintaining its nutritional goodness. Sprouted grains provide the body with many nutrients that are essential for good health and may also reduce the risk of some chronic diseases.

One of the biggest benefits is that whole grains, when sprouted (or germinated) properly, begin to turn into plants. The body recognizes and digests plants as vegetables. The starch molecules (which our bodies ordinarily store as fat) are converted to simple sugars (classified as vegetables by the USDA) and can be easily absorbed and used for energy. The sprouting process also increases the availability of other nutrients, such as proteins, vitamins, and minerals.

Until recently, most sprouted products have been made with a wet-milled or “mash” process. While the grains are not milled into flour, they are ground into a paste for baking, and there is no guarantee that the grains actually sprouted. Mash products are also bitter and coarse in texture (which means that sweeteners have to be added).

Unique Pretzels’ Sprouted “Splits” and Sprouted Shells are not made from mash. Essential Eating®’s sprouted whole wheat flour is made with a newer process that involves rinsing, drying, sifting and milling the sprouted grain into 100% whole grain flour with excellent baking characteristics and no bitterness. And we don’t have to add sugar to improve the taste!
