Whole grains are seeds that have not undergone the germination process. They are enveloped in a tough outer layer called the bran. Proper conditions cause the bran to split and begin to grow a new plant. At this stage, they are called “sprouted” grains.

It requires a complex process to induce sprouting from organic whole grains. The starch molecules in the grain are naturally converted to simple sugars (which we easily digest as vegetables) and the nutrients are preserved. In fact, when sprouted properly, the USDA certifies the sprouted grain flour as a vegetable!

Most sprouted products are made using a wet-milling or “mash” process. The grains are soaked (sometimes drowned), and there is no guarantee that they have actually sprouted. They are not milled into flour, but are ground into a paste for baking. Products made with mash tend to be coarser in texture, bitter, and may contain parts of the broken up bran and foreign matter.

The sprouting process increases the production of vitamins A, B, and C.
