Taste and Texture
Many of us grew up eating white bread and products made with refined flour. We find that whole wheat products are too dense and have an unpleasant, bitter taste. The reason is that whole grains are just that – whole – and the naturally occurring acids and tannins in the outer bran give it this taste.
Refining the wheat grain removes the bran and germ, the most nutritious parts, to make a softer, tastier flour. Although whole grains keep the bran, germ and endosperm intact, manufacturers often add sweeteners to enhance the flavor. Consequently, whole wheat products are often higher in calories than products made with refined white flour.
The dense, heavy texture of many 100% whole wheat products is caused by the bran of the grain. In flour, the bran makes it difficult to trap carbon dioxide that yeast generates in the dough to make a high-rising, tender product, resulting in a dense rather than light texture.
When grains are properly sprouted (or germinated) and milled into flour, not only are the proteins, vitamins, and minerals preserved, but sprouting the grains turns them into plants, which means our bodies are able to digest and metabolize them as vegetables.
